
I had previously mentioned how much I love Grillo’s pickles. When I finish off a container rapidly with no guilt I get another use of two out of it. Right now cucumbers are in season in Florida, so I can get big ones 3 or 4 for $1. I peel 3 of them, slice them in my mandolin slicer and throw them in the pickle bucket. Give them about a week to marinate and then I get a second healthy snack from one bucket of pickles. The cucumbers don’t turn into pickles but they brine up very nicely for a tasty snack. Both the pickles and then the cucumbers have no fat and minimal calories, so eat as much as you want.
